Blackened Shrimp Bite

Ingredients:

  • 1 English cucumber
  • 2 cups cream cheese
  • 2 clove garlic
  • 2 green onions
  • ¼ cup heavy cream
  • ½ tsp kosher salt
  • 1 lb. 26-30 shrimp, tail off
  • 2 tbs Cajun seasoning
  • Sriracha
  • Cilantro

Instructions:

  1. Slice cucumbers into ½ inch slices and core with the tip of a knife to make a little cup. Flip them over and lay them on a paper towel to drain off excess liquid.
  2. Mince green onions and garlic. In a bowl, whisk together softened cream cheese, garlic, green onions, heavy cream, and salt until combined. Transfer into a baggie and cut off a small bit of one corner to make a piping bag.
  3. Toss shrimp in Cajun seasoning and sauté in a frying pan until done. Place on a plate and set aside to cool.
  4. Pipe a little cream cheese into each cucumber. Then top each one with a cool shrimp, followed by a tiny drop of sriracha and cilantro leaf for garnish. Place onto your favorite serving tray and enjoy your next party.
