Goat Cheese Crostini

  • 1 c goat cheese
  • ½ c heavy cream
  • 3 tbs honey
  • ½ tsp salt
  • ½ c blackberries
  • ½ c blueberries
  • ½ baguette
  • 2 tbs extra virgin olive oil

  1. Preheat oven to 350 degrees.
  2. Slice your baguette into ¼ inch slices and then lay them out on a baking sheet. Brush lightly with extra virgin olive oil. Bake for 5 mins or until lightly golden brown. Remove from oven and let cool for assembly later.
  3. Mix the goat cheese, heavy cream, honey, and salt in a bowl with a whisk until smooth and combined. Take a spoon and fill a baggie with mixture. Cut off a small portion of one corner to make a piping bag.
  4. Wash and dry your berries. Once dry, slice all the black berries in half and set aside for topping later.
  5. Assemble your appetizer by starting to pipe your goat cheese onto a crostini aiming for about a tbs per piece. Top each one with a blueberry and blackberry slice. Present on a cutting board or any other serving tray to make a lasting impression on your next occasion.
