Grilled Pork Belly Burnt Ends

Ingredients:

  • 3 lb. pork belly
  • 3/4 cup your favorite grill seasoning
  • 1 tsp salt
  • 3/4 cup brown sugar
  • 3 tbs butter, cubed
  • 2/3 c BBQ sauce
  • 1/4 c apple cider vinegar

Instructions:

Turn one side of grill on low, keeping the other side off – aiming to have grill between 225 to 250 degrees. Cube pork into 1″ pieces and toss in seasoning and salt coating thoroughly. Place onto “off” side of grill cooking with indirect heat for 90-120 minutes or until an internal temperature of 195 degrees.

Mix vinegar, brown sugar and BBQ sauce. Place pork into cast iron or disposable aluminum pan and coat with sauce mixture. Lay the cubed butter on top, finishing with covering the pan with foil. Place back on to “off” side of grill for another 90-120 minutes cooking until tender and an internal temperature of 200 degrees. Remove from grill and let set for 5 minutes, then serve warm. Enjoy!
